Here we are in mid-July of this very strange year. Today would have been the last day of Day Camps Week 1 and some Teams would have been in transit to their second community while others would be enjoying a day off and still others would have already moved. Summer Saturdays usually mean blog posts called “Postcards from Day Camps”; today I have no postcards to send.

      We have now published 2 Terrific Tuesday posts. I have access to stats on the Blogger platform and the blog has had 145 views so far this week but of course I cannot tell how many families are actually taking part in our “Virtual Day Camp”. It has been discouraging not to have much feedback. We had asked people to send in photos and so far only one community sent photos from the Week 1 Challenge. Are we reaching many children? We just don’t know.

      I have spent time over the past few mornings prepping the Week 3 post “He Has Opened My Eyes” and got to make “mud” playdough for the craft that goes with that story. Unfortunately much of the week was spent dealing with the Bank of Montreal as, despite having held our AGM in March, we are still in the process of arranging to update our signing officers. The moral of the story being- “don’t try and change signing officers during a pandemic”!!

      Afternoons I spent churning out more masks with a deadline of Thursday to complete 19 of them for our Bishop as she left yesterday for a very short break and will be returning just in time to conduct an ordination, for which she needs several of the masks. 

Yesterday I Skyped with former committee member (and dear friend 😊) Janice and will be making a few masks for herself and her husband, Matthew. Janice’s sister Jillian (one of the stalwarts of the current DC committee and also a VERY special friend 😊) is travelling out to BC next week with her husband to visit Janice and Matthew and help with painting their recently purchased home so she will be taking the masks with her. I will need to work on them this afternoon as tomorrow afternoon is the CTM Board meeting (via Zoom) so I won’t have much time for sewing. 

     I was able to get the lawns mown on Wednesday but haven’t had time for much other garden work. Yesterday was very wet but early this morning I was able to do a bit of general sprucing up after the rain.

     Well I need to get some baking into the oven and sit down at my sewing machine so we have better wrap this up with a recipe.

Wednesday evening I needed a quick supper so I made-

 

Spicy Noodles with Bok Choy and Mushrooms

 

  • 2 Tbsps.  sesame  oil
  • 12 oz. brown rice noodles
  • 6 cups chicken broth
  • 8 oz. slice mushrooms
  • 1 head Bok Choy, chopped
  • 1 Tbsp. minced gingerroot
  • ¼ tsp. red pepper flakes
  • Sriracha to taste

Cook the noodles, drain and place in 4 serving bowls. Meanwhile bring the chicken broth to a simmer. Heat the sesame oil in the pot in which you cooked the noodles and sauté the mushrooms, Bok Choy, gingerroot and red pepper flakes, just until the Bok Choy is wilted, about 3 minutes.

Divide the vegetables amount the 4 bowls and pour the hot broth over the top. 

Serve immediately with Sriracha on the side for those who enjoy extra spice Serves 4
