Amazingly this is already the last weekend in May!
For so many years past these late spring weeks have been fraught with anxiety as the Day Camp Committee and myself struggled to find a few more Team Members so that, in early July our Teams would be ready to fan out across Canada, visiting communities, coast to coast. Last year and sadly this one too there are no communities waiting to host a Day Camp and the white board in my studio is blank, with not one square filled in. It can be very hard to remain optimistic about the future of our program in these challenging times.
Our next committee meeting will be taking place this coming Tuesday. I so value an opportunity to gather with this small group of dedicated people, to discuss our plans, ideas and concerns and to share our passion for the ministry of Day Camps. Over the week I put together a meeting agenda and had to spend a fair bit of time dealing with the “SPVM Protocole” forms. I have secured a substitute “Responsable” and submitted a form to renew my own Police Records Check through the Diocesan Office and now have to wait anxiously hoping the verification will come through before the date by which the CTM Protocole renewal is due. Sigh.
I’ve also had several FaceTime meetings including one last evening with Guylaine, our new Communications Director, as we continue to deal with the technicalities of migrating the older blog posts onto the new platform. This problem seems to have gone on FOREVER, (honestly, it is now more than 2 years) and every time I think it has been sorted there seems to be another roadblock.
Outside of office time I’ve spent many hours in the garden. Seedpods of various types are currently falling from all the surrounding trees and strong winds have caused a veritable snowstorm all over the lawns and pathways. I’m so thankful Jessica recently procured a super new garden broom for me!
We also have had a couple of rainy afternoons on which I sewed 2 summer outfits- a pair of lightweight overalls and a sundress, some summer bandanas for Thomason and a few scrunchies for myself. Soon I shall really have to return the sewing machine that Sue lent to me several months ago after mine broke down so I’m hurrying to do any “summerish” sewing because I don’t know how long it will be before I can purchase a new machine.
Today is is bright and sunny, although quite chilly so I spent the morning mowing the lawns and as this afternoon there is baking on my “to-do” list I’ll close off here with a recipe.
At Easter a very thoughtful friend gifted me with a box of organic groceries that included a whole frozen chicken. Since last Monday was the Victoria Day Holiday I celebrated by cooking it in my Slow Cooker, using this recipe It turned out perfectly and I packaged up enough cooked meat for several meals plus making a big pot of bone broth the next day. Using some of the chicken I made Curried Mango & Chicken Wraps for my dinner that night. Yum!
Curried Mango & Chicken Wraps
- 6 flour tortillas (preferably homemade 😊)
- 2 cups cooked rotisserie-style chicken
- ¼ cup veganaise (or mayonnaise)
- 1 tsp. curry powder
- 1 yellow pepper, cut into thin strips
- 6 large Boston or romaine lettuce leaves
Combine the veganaise and curry powder and stir well. Spread the mixture evenly over each tortilla and place a lettuce leaf on top. Layer with the chicken and peppers and roll into a neat cone shape. Serve immediately, serves 2-3.
