Although it is only Friday afternoon I’m getting a start on this week’s post because I have a busy day planned for tomorrow 😊
A lot of progress has been made in the past week in putting to bed Day Camps 2018.There are still a few large tasks to do such as unpacking the 6 sets of Team supplies (AGH!!!) but that has already been scheduled for next Tuesday, God willing.
The biggest job of the week has been composing the Feedback Forms that go to every community, which has hosted a Day Camp. Once all 24 had been written, read over, amended and finally “saved” it was also necessary to create the 2019 Program Flyer and Community Application forms as well as to write a Thank you letter that goes to the Clergy and Coordinator of each Day Camp.
This morning I assembled 24 zip files, each containing the documents mentioned above as well as a copy of our Follow-up Brochure that provides communities with ideas and suggestions for creative chidren’s ministry throughout the year. All of that really has taken the best part of a week although of course there have been lots of other tasks here at the CTM office.
Tuesday morning I headed to the bank with all the cash that had been collected from Campers and Staff who attended last week’s residential youth camps. I certainly did not like the idea of keeping well over 1,000$ in cash in my home for long and so this job was a big priority.
 One morning I created the Facebook Event advertising our September Praise &Thanksgiving Gathering AND Spaghetti Supper and also sent it out to a couple of other e-forums where we are able to post free advertising.
Another afternoon Chelsea came to visit as she is already back in classes and the CEGEP she attends is only about 20 minutes from my home. I got to catch up with her as she has been away the last couple of weekends and unable to come to The Pod.
We had a couple of rainy days this week, although not enough to bring much relief to my parched and “droopy” garden 😟. Those afternoons I made a start on sewing Christmas gift bags and also cutting out some baby outfits for two friends who are expecting baby boys this autumn. 
Next week is set aside for the “Changing of the Decorations” to Pentecost/Harvest as the following weekend marks North America’s official end to summer- the annual Labour Day holiday.
I hope to add a few extra photos tomorrow afternoon after hosting Seren (age 8) who is coming for a tutorial on how to use a sewing machine. When I wrote prayer letters to herself and her brother at Junior Youth Camp last  week I included  homemade Gift Certificates, Seren’s is  for an art or craft tutorial of her own choosing and her brother, Malachi’s is for a cooking or baking lesson (he has yet to book a date 😊).
So I’ll slip in a bit about that tomorrow before hitting the “publish” button.
Right now I’m about to close off and make a late lunch as I’m ready for a break after sending out all the Feedback Packages!
However, I cannot end without a recipe and this week I thought I would include a herb and cheese frittata I made for dinner one evening. It includes Oka Cheese, which is a Quebec specialty but any cheddar could be substituted.
Herb and Cheese Frittata
  • 8 large eggs
  • 1 onion, finely chopped
  • 2 Tbsps. fresh chopped sage leaves
  • 4oz. grated Oka Cheese
  • 2 Tbsps. olive oil
Break the eggs into a bowl and whisk well, adding the cheese and herbs. Heat a 9” shallow frying pan over medium heat and sauté the onion in the olive oil until it is softened. Pour in the eggs and cook for about 5 minutes or until almost set. Place a dinner plate over the pan, flip the frittata onto it then slide it back into the pan. Continue cooking until it is firm and browned, about 5 more minutes. Cut into wedges and serve immediately. Any leftovers make great sandwiches the next day! Serves 4

Ps- Seren and I had a great time together and I was able to help her sew her first project- a skirt!!!
