Like most of the Eastern portion of North America, we all spent last week dealing with a Mini-Summer heat wave. I think one of my neighbours best described it as “eerie”.
My Spring flowers have all popped out, the robins are back and the magnolia tree buds are opening.

Hey! wait a minute; isn’t this still MARCH??
We hardy Northerners are still supposed to be skiing and shovelling snow and making Maple Syrup.
From a personal perspective (apart from REALLY enjoying several sessions of gardening!!) I began to get even more anxious about the immediacy of the coming Day Camps Season and panicked over a lack of progress on so many parts of the master plan.
Mercifully, it is WAY colder today and I’m back to clutching a mug of coffee, wrapped in a blanket and PROOFING pages of the Program Manual.
Whew! that was a nasty scare, but it is still only March so maybe it is okay that the song CD isn’t ready or that I’m only half way through rewriting the EDP or that we only have approx. 8 known Team Members and 14 out of 27 churches.
Hmm, actually that looks like a lot of “onlys”. Maybe I should still be panicking just a weensy bit; after all stress adds a certain frisson to the whole planning process!!!
On a brighter note I have collected a group of “crafters” to meet on May 5th and make samples,there have been some more leads on Maritime Churches who might be interested in hosting a Day Camp and my contacts from Mississippi to England are redoubling their efforts to FIND TEAM MEMBERS!!!!
So I intend to take a deep breath and just keep plugging away at all of the above, knowing that God is in control and that, ultimately my job is to do the very best I am capable of and to offer it back to Him, praying that He will help us all to accomplish the perfect plan He has in mind for
(the REAL) summer 2012!
But, in honour of false “Mini-Summer” I’m putting together some warmer weather dinners with plenty of hot green tea to accompany this so we do not end up shivering too hard to be able to wield our chopsticks!

Asian Chicken Salad
- 1/4 cup lime juice
- 2 tsps. soy sauce
- 1 dried chili, crumble
- 2 tsps. olive oil
- 1/2 tsp. sugar
- 4 cups shredded red cabbage
- 1 cup shredded carrots
- 1 cup fresh cilantro leaves
- 1 cup fresh mint leave
- 2 cups shredded cooked chicken
- In a large bowl, whisk together the lime juice, soy sauce,oil, chili and sugar .Add all other ingredients, toss well to combine. Serve immediately.Serves 4
