After a “spring-like” week during which we were all out walking in shoes and light jackets the Lord decided to remind us that this still is Winter in Canada and thus sent a nasty storm Friday night and into yesterday which dumped 20cms. of very heavy snow on Montreal.



So yesterday I spent 2 1/2 hours shovelling and the rest of the day PROOFREADING.
Arnee has dived headfirst into Manual typing!! Every time think I’ve got ahead of her she sends in another bunch of Chapters for me to review!
It is great to see the Manual taking shape and reading the Program helps to lift my spirits as I come to a fuller realisation that Day Camps WILL happen this summer. Once again, I begin to feel that the Lord will provide for us in terms of Parishes; since He honours those who honour Him. And this work, right in my hands, represents the prayerful offering of so many people who have taken time to carefully craft this material for us to use this coming summer.

With Maria away this week, auditioning for Masters’ programs at Yale and Eastman, I was also able to squeeze in making the Team Crosses, here are some samples. I think I’m going to varnish them after they are baked, since they are sort of “candy-caneish” and candy-canes are always shiny!
There have been some encouraging enquiries from several prospective Team Members and I have been in contact with a number of churches, some of which seem to be considering applying to host a Day Camp.
I have also sent out a number of emails to possible Retreat Week Speakers and hope to hear back from those I have approached regarding their availability.
Despite the forecast for more snow ( agh!!!) I am about to throw the house into turmoil as I begin the “Decoration Change” from the Epiphany/Winter Decorations to the Lent/Easter/Spring Scheme. So it may look bleak outside but, inside, we are going to burst into Spring bloom!
This afternoon I began round one of the process by hauling grey, black and navy blue sweaters down two flights of stairs to the basement storage area and climbing back up with armloads of fuzzy pink and mauve replacements ( yes, I also dress seasonally!!!)
In the next couple of days the house will transform from stark greys. blues and blacks to, “over the top” flowery ruffles.
And what am I cooking these days??
Well, last evening I had a delicious bowl of,,,,,,,
Chinese Soup Noodles
- 1 boneless chicken breast, cut into slivers
- 4 or 5 mushrooms, sliced
- 1 cup baby spinach leaves, well washed
- 12 oz. udon noodles
- 2 spring onions, sliced
- 2 1/2 cups chicken stock
- 2 Tbsp oil
- 2 Tbsp soy sauce
- 2Tbsps. Chinese black vinegar
- 1/2 tsp. brown sugar
- a few drops sesame oil
- red chili sauce, to serve
Cook noodles, drain and place in a warm serving bowl. Bring stock to the boil. meanwhile, in a wok, stir-fry the chicken in the oil until no longer pink.Add mushrooms, spring onions and spinach and fry for 2 more mins. Add all sauce ingredients and heat through.
Pour chicken mixture over noodles, add heated stock.
Serve, accompanied with chili sauce. Serves 2, generously!
