February Day Camp Committee Meeting

      I waited to write this week’s post as last evening was our monthly committee meeting, which I thought might be of interest to some of you.

We had  good meeting, with 4 of us sharing dinner together, one more coming in person for the meeting part, another with us via g-talk, and of course much input from my two, appallingly badly behaved furries!!

 The fellowship over dinner is always a good way to start and Josiah came early to try and sort out getting the Church schedule for 2012 up on the Blog. ( He has improved the situation but it is still a work in progress!).  I hope he can also solve the problem of inserting the more comprehensive version of the 2011 Slide show and post the Parish Supply list for me. Ah technology!

After dinner (see Chicken Minestrone recipe below), we launched into the meeting and Emma gave us a short Devotion on 2 Corinthians 3:18 
      We covered a lot of territory last evening. We discussed the 11 Churches we now have signed up, the need for a third Training Parish location (and a suitable Team leader for that Camp),  and potential Team Members( I think we have 6 or 7!)
 
       We also looked at various aspects of the Program and I urged two members ( you know who you are!!!) to submit the Manual Chapters which they have been editing. Most Chapters are now in and the next phase will be the typing ( by the noble Arnee) and proofreading of the whole 2012 Program Manual, “One of Us”.
 
    The Liturgical Dance DVD recording has now been scheduled for March 17th, so it will behoove me to get the choreography down on paper and be ready to teach it to the dancers that day!
 
     We had a brief glance at the schedule for the 2012 Retreat, with especial reference to finding Evening Speakers( we now have a list of potentials) and a Worship Director (there were a couple of suggestions ).
    Next month I shall hand out draft copies and we will spend a bit more time looking at plans for this extremely important week.I also need to write a note to our Bishop to invite him to come and Commission our Teams, a very special event.
     We still need to complete a full inventory of Team Supplies and begin purchases of new stuff for the coming summer. I am expecting Lamb to catch a flight back to Montreal in time to act as Supervisor of these activities. It is no use the flock hurrying back yet as there is simply no decent grass for spring grazing!
       So ,all in all, it was quite a productive meeting. We need to keep the enthusiasm bubbling!( Next Team Gathering on Saturday, April 14th, a poster will soon be up). 
     This afternoon I plan to make a start on the Team Crosses (watch for a sneak peek if my fimo clay work is successful!)
As promised, here is last night’s main course…..
Chicken Minestrone
  • 2 boneless chicken breasts (or 4 thighs), cut into bite-sized chunks
  • 3 slices bacon, diced
  • 2 large onions, chopped
  • 4 potatoes. diced
  • 2 large carrots, diced
  • 4 stalks celery, diced
  • 2tsps dried basil
  • 1tsp dried rosemary
  • 8 cups chicken stock
  • 2 cups frozen peas
  • 2 cups very small pasta shapes
  • grated Parmesan, for serving
In a large soup pot, fry bacon over med. heat for 5 mins. add onions and herbs and continue frying until onions are softened. Add chicken pieces and cook for 5 more mins.
Add potatoes, carrots and celery and cook for 5-7mins. Add stock and bring to the boil. Cover and simmer over low heat for 30 mins.
 Add peas and pasta and cook until pasta is al dente.
Serve in heated bowls,  topped with grated Parmesan and accompanied with fresh bread.
Serves 6-8
