My hopes of creating this post yesterday were dashed as the day proved quite hectic right from start to finish!
……My usual lift to church had forgotten to mention that they would be away for the weekend so I had to scramble to catch the bus, then,after lunch I made a quick dash out with Wil before Victoria Timothy and William ( my 2 year old Godson) arrived from Ottawa prior to the Senior Youth Camp Staff meeting which was to take place at 3pm in the CTM Office aka my living room!
Once they had all departed I made a speedy supper and then Sue came over. Two of her boys are spending the night here tonight as Nick and Sue are having a short getaway at their cabin to celebrate their wedding anniversary.

In the midst of this  whirlwind day, I did not neglect to light the 4th Advent candle and say the prayers, with my furry companions almost singeing their whiskers to get a closer look (of course the close proximity of the toasted ham and cheese supper sandwich might also have had something to do with their heightened interest!)
   
    It seems a long time since the Day Camp Committee Meeting last Monday evening. We had a productive time although our numbers were somewhat decimated due to exams and other pre-Christmas commitments.
     It looks as if progress is being made on Program planning and I’m delighted to report that we now have 8 churches pencilled in for Day Camps 2012.
    At our next meeting we shall be considering possible Leaders for the 3 Training Parish Camps and I expect to be ready to discuss some preliminary plans for the Retreat as I always put in some work over the Christmas holidays on that important aspect of our Training .
   I am hoping that some of the Manual Chapters will be submitted soon so that the editing and typing work can proceed and we still need to find a supply person. That fortunate soul coordinates the inventory and then the purchasing and packing of the Team Supply Boxes, a somewhat thankless task which requires a wealth of detail and a special gift for organisation!!
I spent a frustrating 45minutes this morning trying to move the Advent Wreath photos from the CTM cell phone onto the PC  in order to then transfer them to the MacBook so I can add them to this blog. Sadly, due to the vagaries of technology, the camera is not compatible with the Mac and thus there is a lot of complicated wire tangling and teeth grinding involved in this tedious process.. I have not given up hope of succeeding.
    Speaking of photos, watch for a special insert later this week of photos from the November Coffee House, as our photographer for that event is coming to lunch tomorrow and has promised to bring the files .OOO HOO!
 
         I was debating which of many Christmas recipes to share this week but since Jillian and I are going to have “Silver Dollar” pancakes for tomorrow’s lunch I thought that would be a good choice for the “Recipe of the Week” as it is a nice one to try for breakfasts and brunches over the Holidays!
Silver Dollar Pancakes with Christmas Spice Butter
Serves 6, generously
  • 2 cups all purpose flour
  • 1tsp. baking soda
  • 1tsp. salt
  • 2 eggs, separated
  • 2 cups sour milk (or buttermilk)
  • 4 Tbsps. melted butter or margarine
  • 1/2 tsp. vanilla extract
  • vegetable oil for frying
  • Christmas Spice Butter
  • Maple Syrup
In a small bowl, stir together flour, soda and salt.
In a bowl, using an electric mixer set on medium speed, beat the egg yolks with the milk until blended. Add the flour mixture, melted butter and vanilla and beat just until smooth, do not over beat.
With clean, dry, beaters, beat egg whites with  pinch of salt until soft peaks form. Fold into batter.
Heat a griddle or large frying pan over medium heat and lightly grease with oil.Using a tablespoon, spoon batter onto the pan without overcrowding. Each pancake should be no more than 10cms. in diameter.
Cook until the tops are covered in tiny bubbles.Flip and cook until the second side is browned.
Transfer to a heated platter and keep warm while you cook the rest of the pancakes. Serve with warm maple syrup and…
Christmas Spice Butter
makes 1cup
  • 1cup softened butter or margarine
  • 1/2tsp. each, ground cinnamon, ginger and nutmeg
  • 1/4 tsp. allspice
  • 1 Tbsp. sugar
  • In a small bowl, blend all ingredients with a spoon.
