Our September Meeting

Well. the Day Camp highlight of the week was certainly the Committee meeting on Monday!  We had a pretty good turn out, 7, including Brenda ( and her cuckoo clock!!!) via G-Talk. Sadly, Tricia was not well and thus unable to come  and now we are temporarily without a Chaplain so that seat was empty but 7 of us managed to eat up all the couscous and chickpea salad and fresh apple cake AND get through a lot of business.
 
We took a look at the meeting schedule for the year and filled up the roster for devotions, secretary etc and then launched into discussion about upcoming events ,like the OCTOBER TEAM GATHERING! and the COFFEE HOUSE!!!!
 
Josiah has offered to make us a flyer for that and a few of us are going to work as a sub-committee to get it organised. This year it will include an Arts Festival component and we will be advertising through this Blog and Facebook. If you would like to either have space to display (and sell ) your art OR if you would like to share your talents by coming to play music, sing, dance, recite poetry etc, PLEASE email me or leave a blog comment. We need to get going on this soon as November 12th is not that far away!!!.
 
Over the rest of the week I have spent time checking in with some of the people whose names came up at the meeting. ….Those who may be willing to help with editing various Chapters of the Manual, our AMAZING Manual compiler, Arnee and others who we need to approach to help with the wealth of tiny details which go into the preparation of a Day Camps summer.
 I’m really pumped for this!! it was great to see the energy and enthusiasm of both old and new Committee Members and most of all an overall desire to seek the BEST and offer it to the Lord and to walk through this year in His Will.
 I know there will be hard and discouraging patches ahead as well as the mountaintops but we are sure off to a good start and I feel God’s smile shining on us!!



    Couscous and Chickpea Salad

 
  • 1 1/2 cups instant couscous
  • 1/2 tsp salt
  • 4 firm tomatoes
  • 2 spring onions
  • 1/2 cup chopped parsley
  • 1 can (300g.) chickpeas, rinsed and drained
  • 200g chorizo sausage( precooked), sliced
 
Dressing:-
  • 2Tbsp cider vinegar
  • 4Tbsp olive oil
  • 3 Tbsp lemon juice
  • 1clove garlic.crushed
  • 1tsp ground cumin
  • 1tsp paprika
  • black pepper
 
Bring 1cup water to a boil.Remove from heat, stir in couscous and salt and leave to absorb liquid.( about 20mins.) Leave to cool.
Cut tomatoes into small dice, slice onions.
Whisk all dressing ingredients together in a large serving bowl, adding pepper to taste.
Stir in parsley, couscous, chickpeas,tomatoes, diced sausage,and onions.
 Serve at room temperature.
