Hello Blog Friends, Hallelujah Christ is Risen!

Well, here we are at the end of the second week of Easter and it has been another, pretty full one! Last Sunday afternoon was our Annual General Meeting, which, of course, meant another sheaf of minutes to transcribe.

I set about tackling them first thing Monday morning, since I knew there was a Diocesan. Council Meeting, looming on the horizon on Tuesday evening so there was no time to lose in getting the AGM minutes off my plate. Following the AGM, there are always a few other tasks to complete, so most of Monday was dedicated to general office work.

Tuesday, I was back on the Day Camps track, since we are now on the home stretch of completing the 2026 Program Manual (which, I hope, will be in the hands of host communities before the end of April) with just a bit more proofing and tweaking to go. Jillian and some committee volunteers have all worked to get the layout and formatting looking really spiffy. Yay!!

Wednesday Jillian and Clara came for lunch, so we went over some of the points that the proofers had flagged and she now needs to tidy up page numbers and generate the Table of Contents page, then the Manual should really be done and dusted.

There are so many small pieces to the metaphorical “jigsaw puzzle” of Day Camps! Thursday, I went on a searc through the files for a good Scavenger Hunt list, which needs to accompany one of the afternoon Special Events. After wading through a bunch of (virtual) documents, I finally found a very good list, extracted it, reformatted it and moved it into the “Team Leader Folder”, which is part of the Resource Package. Whew! Check another item off my own list!!

We have had SO MUCH RAIN this week!!  I keep hoping to start cleaning windows and washing curtains, which is a pretty big “Spring Cleaning” job but we never seem to have two consecutive days without a downpour and I need to spread such a big task over three days. Yesterday afternoon I went out and did the basement and garage windows and, as it is currently sunny, I spent a couple of hours, early this morning, doing the exterior of the ground floor windows, doors and front porch. Showers are predicated for tomorrow, but, after morning Services, I hope to do the top floor windows. I can only do the parts accessible from inside as I am too scared to climb that high outside! After that there will just be all the white curtains to wash and I prefer to so that on a sunny day so they can be dried outdoors, then there are all the mirrors to clean and the large, glass-fronted  china cabinet, so even if I keep on schedule, it is unlikely the job will be completed until, at least next Tuesday; however, after a long cold winter, it is a joy to see shiny windows and fresh curtains!

It is now late afternoon, I am far behind on the Saturday Bake and must turn my attention to that. Today is the anniversary of my Mum’s birthdate and, regular blog devotees will already know that means I MUST bake and ice a Tropic Aroma Cake but first on my list are the bi-weekly GF loaves and a crusty “boule” for myself and I cannot sign off without the weekly recipe!

 Last weekend I made a really tasty Salmon Sushi Bowl, and will certainly be having it again, as the weather gets warmer, YUM!

Salmon Sushi Bowl

  • ¼cup rice vinegar
  • 3Tbsps raw cane sugar
  • 1tsp sea salt
  • 1½cups sushi rice, rinsed until water runs clear
  • 2 tins, wild caught salmon
  • ½tsp toasted sesame oil
  • ¼cup Tamari
  • 3Tbsps apple cider vinegar
  • 2Tbsps olive oil
  • 2Tbsps coarsely chopped green onions
  • 2Tbsps minced fresh ginger
  • ½ English cucumber, thinly sliced
  • 1 cup green cabbage, finely shredded
  • 1 cup shredded carrot
  • 1 cup sliced radishes
  • Torn toasted nori sheets, for garnish

In a large saucepan, combine rice vinegar, sugar and salt; stir to dissolve the sugar. Add the rice and 1¾ cups water, and mix well. Bring to a boil over high heat, then cover and reduce heat to low. Cook until rice is tender and most of the liquid is absorbed, about 20 minutes. In a small bowl, toss salmon with ¼ teaspoon sesame oil. Once rice is tender (after about 20 minutes), arrange salmon in an even layer on top of rice, cover and steam until fish is warmed through, about 5-8minutes.Meanwhile, combine Tamari, cider vinegar, olive oil, green onions, ginger and the remaining ¼ teaspoon sesame oil. Scoop salmon and rice into bowls. Top each with some cucumbers, cabbage, carrots and radishes. Drizzle with the dressing, garnish with nori. Serves 4
