Pentecost 7

Hello Blog Friends!

      It’s time for another update in the ongoing saga of migrating the Blog to WordPress, sigh. 

      Last time I mentioned it I thought we were close to completion, but, no, it turned out that the person handling the migration simply decided to make another subdomain and place the Blogger posts there. How anyone was supposed to be aware of this subdomain if they were trying to access older posts I’m not quite sure, however that “solution” was impractical, so now our Communications Director is planning to migrate a month’s worth of posts at a time onto the new site. Until then I am obliged to keep posting on both platforms, so you will find this (and other posts from the last few months) in both places. Please keep reading, and thanks for your patience as we try to sort this out. 

        This week began with preparations for our July DC committee meeting, to be held Tuesday evening. I was also hurrying to pull together some of my ideas for the All Age Gatherings e-book I’m compiling since I wanted to present that at the meeting. Sadly, by Tuesday 2 members had to cancel but there should still have been 4 of us attending so we forged ahead. At 630pm Jillian and I connected on Google Meet but the others didn’t appear. After texting one person I discovered she was suffering from a migraine and thus unable to join and the other member was unable to log on, thus the meeting ended up being cancelled, which was very disappointing.

      Wednesday morning I sent a loooong email to the committee asking for feedback and suggestions for various topics we had been supposed to cover the evening before, so far two members have sent some helpful comments.

     Thursday Mae Anne came for lunch.It was so special to see her in person again after almost 18 months! She has a summer position at the YMCA, which is literally only 5 minutes away from my house and now with restrictions lifting a bit she was able to join me for lunch before her shift. Mae Anne has been involved with Day Camps for about 10 years, firstly as a Team Member, then Leader, then as a Training Leader and most recently she as a valuable member of the DC committee. It was interesting to hear about her job working with at risk youth. She has just graduated from a 3-year CEGEP (Junior College) program in Special Care Counselling; and has already secured a full time position with a suburban school board where she had an internship during her final year at College. Of course we also talked Day Camps while munching Tuna Pitas, before she rushed off to work. Thomason was his usual badly behaved self, but I have hopes that if others come to visit a bit more frequently he will begin to relax a bit during these interactions.

     Outside of office hours I have begun a bookbinding project with the idea of making journals as Christmas gifts for several close friends. I briefly studied Japanese Bookbinding at Fine Arts College and have been watching some excellent online tutorials, more on this in upcoming posts 😊

       Early in the week I completed a tiered patchwork skirt for myself in a colour palette suitable for the autumn. I am already also knitting mittens as Christmas presents and have just ordered a few skeins of yarn to knit socks for Christmas gifts.

      The weather has not been the greatest but I’ve still managed to spend a bit of time in the garden each day. The lilies are just beginning to bloom and already there are  Day Lilies, Asian Lilies and Oriental Lilies in flower. Yesterday morning I walked Thomason extra early and then mowed the lawns. We had rain the evening before but the grass was not too soggy although the job did take longer than usual. I was encouraged when a stranger stopped and complimented me on the lawn, asking for advice on how to improve his grass and then a lady who was walking passed told me she loved my garden, which was so kind.

     Today I need to make some dog biscuits for Thomason and some digestive biscuits and rusks for myself, then later on hope to get some more work done on the bookbinding project.

     Last night  I made a favourite Asian Salad that is perfect for a light summer supper, so I thought it might to nice to share the recipe.

Pak Choy and Tofu Salad with Peanuts

  • 6 Pak Choy (or baby Bok Choy), trimmed and sliced
  • 4 medium carrots, thinly sliced
  • 6 garlic scapes, or green onions, sliced
  • ½ lb. firm tofu, cubed
  • 3 Tbsps. sesame oil
  • ½ tsp. chilli flakes
  • ¼ tsp. powdered ginger
  • 3 Tbsps. Tamari
  • ½ cup chopped fresh cilantro or basil
  • ½ cup dry roasted peanuts

Arrange the vegetables on 3 or 4 individual serving plates. Whisk together 2 Tbsps. of the oil, the Tamari, chilli flakes and ginger and drizzle over each serving.

Heat the remaining Tbsp. of oil and fry the tofu cubes until golden brown all over. Divide between the plates and garnish with peanuts and cilantro or basil. Serve immediately.
