Epiphany 3

         Here we are already at the last Saturday of the month! January often seems to drag slowly but this winter it as really flown by. With the first week still being full-on Christmas Season and all the other weeks so packed with meetings, activities and SNOW the whole month has passed in a blur (or maybe a white out 😊).
        Originally we were supposed to hold the Training Retreat planning meeting today but that has been postponed, along with the Team Gathering, to next Saturday, which already looks a bit like a marathon! I heard yesterday that my Godsons are going to be in Montreal next Friday and so the whole Huyer family is coming to lunch. I haven’t seen them since last August and it will be wonderful to give them their Christmas gifts and to see how they have all grown!!
      This past week started with the Day Camp committee meeting and it was excellent to have all of us present (2 via Zoom!) and no power outages, so we were able to get a lot accomplished.
      We now have two of our 3 Training Day Camp host locations confirmed and just this morning one of the potential candidates forTraining Team Leader emailed to let me know he is on board. Woo Hoo!!!!!!
     During the week I have continued badgering all the people who are supposed to submit content for the Program Manual. So far we have 3 chapters but are sadly lacking in parts of the Main Presentation (Lamb, Quiz, Songs etc.) and also still need the Games and Scrambler/Climber Devotions Chapters. It is sort of like pulling teeth to draw the whole manual together but I am as determined as ever to make it happen😊
     Outside of office hours I have been sewing Japanese aprons, one of which is  a gift for a dear friend whose birthday is in early February. I finally got time to complete them yesterday afternoon and am pleased with the results. I was given one for Christmas this year and am crazy about it so I made a copy (apron 1) and now feel confident about cloning more for future gifting 😊 I’m also working on a ludicrously difficult glove pattern from the Nfld. mittens book, this pair is actually for myself but the plan is,  once I’m satisfied with the final results, to make another pair as a very late Christmas gift.
          Today we are experiencing “mixed precipitation” which means snow, followed by freezing rain followed by rain. Since that is frequently the recipe for a power failure I think I had better end here and get my baking in the oven before it is too late.
         But it is no use closing off without a recipe.
    For the Day Camp committee meeting on Monday I adapted a recipe I found on the internet. It was very popular with all of us so do give it a try! 
Sweet Potato Chicken Chilli
  • 1 Tbsp. olive oil
  • 1 lb. ground chicken

  • 1 large onion, chopped
  • 2 cloves garlic, chopped 
  • 1 tsp. salt
  • 1½ tsps. black pepper

  • 1 Tbsp. chili powder

  • 2 tsps. chipotle powder
  • 2 tsps. cumin 
  • 1 lb. sweet potatoes, diced 
  • 1 cup uncooked quinoa
  • 1 28oz. can crushed tomatoes
  • 1 can black beans, rinsed and drained
  • 3 cups chicken stock 
  • For serving: cilantro, avocado, shredded cheese, tortilla chips, plain Greek yogurt
Heat the oil in a large skillet and brown the chicken, onion and garlic for 8-10 minutes. Add the salt, pepper, chili powder, chipotle and cumin, stirring well to combine. Transfer to a large slow cooker. Add the tomatoes, beans, quinoa, sweet potatoes and stock. Cook on Low for 6 hours. Serve with desired toppings. Serves 6
