Oh my goodness, it has been quite a zooy week! It started off with a HUGE snowfall Monday night into Tuesday, which took several hours to shovel out on Tuesday morning. All the while I was hoping that our bishop might cancel that afternoon’s Diocesan Council Meeting but, no, they went ahead with it. Agh!!! I had been expecting my colleague Sophie, the clerical secretary of Council to come for lunch. Sophie is a big dog fan, has a gorgeous Saint Bernard named Sunshine and has been anxious to meet Thomason, however her Parish is off the Island of Montreal about 45 minutes drive on a good day so we regretfully had to postpone her visit. Sophie joined the meeting from home, via Zoom and instead of getting a ride downtown I had to take the bus. Fortunately Thomason’s favourite puppy-sitter, Tyler, was still able to come and hold the fort until Steven got home from school as my meeting was from 4-6pm and so I wasn’t home until nearly 7. That was Tuesday!
Wednesday, Day Camp Committee member Mae Anne came for lunch and a time to visit and pray. She has been going through a rough patch after having THREE wisdom teeth extracted at the same time so it was good to visit and catch up one on one. We had soup because she is still not eating solid foods!
Thursday I got a lot of work done on the Creative Connection Chapter so now all I have left is to choreograph the Liturgical Dance. As this coming Monday will be our monthly committee meeting I’m planning to play the song for everyone and get their feedback. The Registration Crafts are almost done, I’ve pretty well decided on all the activities but still need to type out a list of supplies and the instructions for each craft. Then I have also been continuing to send notices to communities across Canada, encouraging them to reserve their 2020 Day Camps.
During the week Steven asked if some friends of his might be able to stay with us this weekend. These 3 young men drove up from New York yesterday to meet up with John, the brother of 2 of them, who is in Montreal on a concert tour with the National Youth Orchestra. The 3 brothers are old family friends of Steven’s family from the years they lived in Winnipeg. They are all musicians, as is the other friend, Anthony. Thursday evening Steven went to the concert, which took place at Notre Dame Basilica in Old Montreal, then the gang from New York arrived late yesterday afternoon so their were six of us for dinner last evening!!!In the morning I had headed up to the bank on CTM business and then stopped at the grocer to load up with ingredients for the meal 😊.I decided to make borscht because I have all the root vegetables on hand from my winter veggie box. Along with the borscht I made a batch of cornbread and for dessert baked an apple pandowdy. In the end last night they all decided to bunk into John’s downtown hotel room as they had been out on the town rather late. This caused a weensy problem here at home since I had already prepared Overnight Oats in my slow cooker, set the breakfast table, and of course made up extra beds. I’ve never tried freezing overnight oatmeal but that’s what I’ve done with all the extras. Steven manfully ate 3 helpings this morning and I had 2 but even so there are a lot of leftovers.It is a delicious recipe and great in the winter, so let’s finish this post with it.
Overnight Oatmeal
- 1 cup steel cut oats
- ½ cup each dried cranberries and chopped dried figs
- ¼ tsp. sal
- t2 cups milk
- 2 cups water
- ½ cup heavy cream
Place all the ingredients in a slow cooker and stir well. Set on low and cook for 8-10 hours.Serve with maple syrup, plain yoghurt and/or milk to taste.Serves 2-4, easily multiplied 😊
