Victoria Day Weekend already! EEK!!! And that means time to “Change the Decorations” this coming Monday (a typical example of how I tend to spend a so-called “holiday”😊 ).

Anna has been hard at work on this project for quite a while, with a “brief” interruption as her whole family relocated to Halifax a few months ago!
As mentioned in several recent posts, we are still hunting for FIVE more host communities and are also for FIVE more Team Members. On a brighter note I did have an email yesterday from the Bishop of Saskatchewan who might have a community interested in taking one of those vacant spots. Since I do not believe in “luck” I am asking friends to pray that if we are meant to serve in the community of Spiritwood, the dates we are free will match with the dates they would like help with a Day Camp.
The May Day Camp committee meeting will be happening next Tuesday which means I shall really have to hustle to complete all the decoration changes in time as I need to prepare a dinner for 6 that evening and always try to do something a bit special for everyone.
We have had rather a wet week and I had hoped to mow the lawns for the first time today but as my push mower desperately needs to be sharpened I have a feeling it will not work very well on wet grass. On the flip side, push mowers do not work well on long grass either and the grass is getting pretty long so I might still try to make a start later today and see how it goes.
Thursday evening we held the monthly CTM Board Meeting so I’ve had rather an overdose of Minute-taking this week, as Tuesday was the monthly Diocesan Council. At least both sets of draft minutes are now completed so I really hope that I can devote time over the next two days to a few pressing activities around the house.
But before I head outside to see if the grass is still too wet to mow we need a recipe.
I served these cookies on Thursday evening at the Board meeting and was asked to share the recipe.
- 12Tbsps. butter or margarine
- ½ cup granulated sugar
- 1 cup brown sugar
- 1 egg
- 2 Tbsps. water
- 1 tsp. vanilla extract
- 2 cups unbleached flour
- 1 tsp. cinnamon
- ½ tsp. coarse sea salt
- ½ tsp. baking soda
- 2 cups rolled oats (not quick-cook oats)
- 1 cup raisins
Cream butter and sugars until fluffy, mix in egg, water and vanilla. Whisk together the flour, cinnamon, salt and soda. Add to egg mixture and mix well. Stir in oats and raisins.
Using an ice cream scoop, place balls of dough on parchment-lined baking sheets. Gently flatten with damp fingers. Bake in a preheated 350º oven for approx. 12 minutes.
Cool on a rack. Makes 18-20 large cookies.
