Our Spring Team Gathering will be starting in a few hours. The buffet table is set, hot Cranberry Tundra is simmering in the crockpot and despite Herculean efforts on several peoples’ parts to find out; I have no real idea who is actually coming. AGH!!!!!!!!
Of course there is nothing new about this problem, but every time the Day Camp committee strategises as to how to best contact people and get them to commit, it never seems to work out. Sigh.
There will certainly be one very large rice salad with cashews, since the rice is currently cooling prior to assembling. What other food will be coming for the Pot Trust Supper, is somewhat of a mystery, although mention has been made of “brownies, cookies, and corn chips” Ahh the fine nutritional values of teenagers!!
This morning, before setting up the table the sewing machine was out for a little while to finish hemming a new tunic dress. I’ve had time for a bit of sewing this week. first making bench cushions for a friend and two new spring dresses Woot woot! The dresses are thanks to Anna’s generous gifting of a whole pile of cotton print fabrics.
Of course there has also been a fair amount of shovelling( not very springlike!)and today is still very cold, I’m just hoping the little croci are hardy enough to survive -10C.
There is more sewing in the schedule, as on Monday the plan is to sew up several pairs of baby pants, since one of our former Team Leader’s has recently given birth to a baby boy and he must have a present from me 😊
During the coming week I also want to get to grips with some crafting for the upcoming Coffeehouse. Amanda has, once again, agreed to coordinate a crafts table but she really needs some extra support as the date is very close to the end of CEGEP term. In the Fall I made fimo clay vegetable earrings so this time ,for spring, the plan is to make flower ones!
Yesterday we posted the Church Schedule here on the blog, so if you would like to know where Day Camps will be happening this Summer you an check under the “Churches and Communities” Tab above. We will update the schedule once a month until July. The Program Manual “Signposts” is also now in the hands of all the Coordinators and Clergy who have applied to host a Day Camp and the past few days have seen a couple more host community enquiries. This evening, I fondly hope to receive Team Applications, one serious concern preying at present is that NONE of our 2015 Team Leaders will be returning this Summer, which means training 6 (SIX!!!!) new Leaders, not a simple task ☹️. But the Lord has a plan, a GOOD plan for Day Camps 2016 and we are going to hold fast to His promise. So now I’m ready for the influx of young persons. Even as I’ve been working on this post a number of messages have been arriving; better go and find some more cutlery and dinner plates!
But before ending off, here is the salad recipe…
Rice Salad with Ginger-Soy Dressing
- 3 cups cooked basmati rice, chilled
- ½ a fresh pineapple, cubed
- 1 Daikon radish, julienned
- 2 large coloured peppers, julienned
- ½ red onion, slivered
- ½ cup toasted cashews
- ¼ cup olive oil
- ¼ cup soy sauce
- ¼ cup rice vinegar
- 2 Tbsps. grated fresh ginger
In a large bowl combine the chilled rice and vegetables. In a measuring cup mix together the dressing ingredients. Pour the dressing over the vegetables and rice, toss thoroughly with a wide spatula. Pile the salad in a large serving bowl and garnish with the toasted cashews. Serve chilled or at room temperature. Serves 8
