A somewhat dull title for what is never a dull meeting, but there it is!
This week began with the Day Camp Committee meeting on Monday evening. All but one of our members was able to be present and we covered a lot of territory.
We reviewed the Coffeehouse, all agreeing that it had been SUPER, discussed the progress of the 2016 Program, talked about the recruiting of Team Members and the locating of Host Churches,
lamented the resignation of our VERY helpful Day Camp Gopher and pondered a replacement (without success), made plans for the January Team Gathering and, as always I was mercilessly teased by Randy, sigh.

Tuesday I launched into dealing with the results of all the suggestions made at the meeting and then dashed off to a very long session of Diocesan Council, not getting home for dinner until close to 8pm.
Wednesday I was very happy to post Wednesday Words and hope everyone has read the article by Laura Hamilton!
Yesterday saw another treat with the Family Friday post in plenty of time for Advent crafting. Yay!
In between there has been yet more raking, will those leaves never end? and sewing. Thursday afternoon I tackled a big box of fabric pieces, which Victoria had asked me to hem for SYC. They have something to do with Monopoly, which I always thought was a board game, however, in the hands of the imaginative SYC Staff, anything is possible!!
I’m very proud of Malachi’s birthday gift, which I also finished that afternoon. I had decided to paint him a yoyo and was pondering what sort of design to use when his Uncle Matthew reminded me that Malachi has a passion for all things Middle Earth, so I checked for images on Google and settled on a Gandalf yoyo-what to do you think?
This week has also seen the start of a painstakingly slow hand-sewing job of restoring goldthread work on one of the Bishop’s Copes. It is a very old and beautiful vestment originally belonging to the Church of St. Columba, right across the street from this house and I actually did a lot of work on it about 15 years ago too. The process of recouching down the gold thread with silk is tedious but it is sort of nice to be reconnected with this lovely embroidery again. The mini-cupcake marathon of Christmas baking also continues apace. I think I am now at 8 varieties, yahoo!!!! This afternoon 2 more will be added to the list so the end is now in sight.
Once again I must apologize in advance and mention that Sunday Reflections will appear on Monday (I hope) because tomorrow we are off to Ottawa for the christening of Andrew, my newest Godson and goodness knows what time we will get home.
Next week will also include the “Changing of the Decorations” are we really on the cusp of Advent? Eek! So much more to prepare for Christmas, but oh I do LOVE Advent, in fact it is definitely my favourite Liturgical Season, so much hope and expectation, tinged with a good dose of repentance, ah…Advent!
Before I get down to baking we need a recipe to end off. When baking this Wednesday, I decided to use a lovely Delicata Squash, which Victoria had brought me the last time they visited. Delicata is so super because you can eat the peel; in fact it is tasty and not hard like other types of squash. The result was very yummy so here goes…
Mexican –Style Stuffed Delicata

2 large Delicata Squash, halved lengthwise with seeds removed

1lb. lean ground pork
- 1 medium onion, chopped
- 1 large clove garlic, minced
- ¼ tsp. chilli pepper flakes
- ¼ cup chopped fresh cilantro
- 2 Tbsps. limejuice
- ½ cup grated cheddar
- 1 cup each cooked black beans and white rice
Place the prepared squash “boats” on a large parchment lined baking sheet. Preheat the oven to 350°F. In a large sauté pan brown the pork along with the onion, garlic and chilli flakes, over medium heat. Remove from heat and stir on the cilantro, lime juice, black beans and rice, combining well. Pile the stuffing into the boats and top each with grated cheddar. Bake for approx. 1 hour or until the squash is tender but not mushy. Serves 4.
