Pentecost 14

  The house is suddenly very quiet this afternoon, after another whirlwind “Huyer Family”visit!  Yesterday Victoria and the 3 boys (and 2 dogs!) arrived in time for High Tea, followed by Timothy who came later by train.
        In the evening, I looked after William and Andrew while Alexander went with his Mum and Dad to a small party for two of the SYC Staff, who were recently married in Oregon and had wanted to hold a gathering in Montreal for friends who had not travelled out to the wedding.
      Today there is a bachelor event for another core SYC Staff member so Timothy has stayed on for that while the rest of the family has driven on to Sherbrooke to visit the children’s grandparents.
    Timothy will be back late this afternoon to pick up his things before taking an evening train back to Ottawa.
   Prior to all this weekend activity the house was turned upside down for the “Changing of the Decorations”. Although the last weekend in August is a bit early to change to Harvest/Pentecost the last few days were fairly clear on my schedule so it felt right to jump in and get the massive job done. As I look around the house, deck and porch I am happy to see all the “new” things and realise that I was ready for this seasonal change.
   In between this big job there was time for the usual office work and a start has been made on the 26 Feedback forms, which need to be filled in and sent to all of the 2015 host churches, along with a 2016 Church Application and a simple flier outlining the basics of next summer’s Program “Signposts”.
   I also squeezed in some baking and sewed a pair of cushion covers for the studio. And I’ve started to knit a fall cardiganin a lovely Quince and Co. yarn “Owl”, the colour is called “Camomile”.So as you can see there has not been much time for sitting around and of course with all the sofa covers and cushions being taken off and changed, there wasn’t anywhere to sit down if I had wanted to!!
   Before I upload this week’s photos and type my recipe, someone seems anxious to head for an afternoon perambulation so I had better end off here…
    Back from our walk it’s time to share a recipe. Yesterday, for High Tea, I made my Mum’s jellyroll, a quintessential Teatime dessert.Here you go!

  • 1 ¼ cups flour
  • 1 ½ tsps. baking powder
  • ½ tsp. salt
  • 3 large eggs
  • 1 cup sugar
  • 3 Tbsps. milk
  • grated rind of 1 lemon
Line a 12”x16” jellyroll pan with parchment paper. Preheat oven to 400ºF. In a small bowl, whisk together the flour, baking powder and salt. In a large bowl beat the eggs with an electric hand mixer until thick and lemon coloured. Gradually beat in the sugar. Add the milk and lemon rind, beat. Using a wide rubber spatula, fold the flour mixture into the egg mixture just until incorporated. Spread the batter evenly in the prepared pan. It should only be about ¼” deep. Bake for 12 mins. watching that it does not burn. Turn out onto a damp tea towel, which has been sprinkled with icing sugar. Peel off the parchment and trim away the hard edges. Spread with 1 cup of jelly or strained jam (I used blackberry). Roll immediately. When cool, sift icing sugar over the top before serving.
