Easter 4/Coffee House

Well here we are on the day of our Spring Coffee House! It is hard to believe that we are already approaching mid-May, EEK!! So much still to accomplish! But maybe it would be good to recap the week, to date, and see what has been accomplished.
        One big project this week was the first of 3 mammoth “baking/cooking “ days on which the food preparation for our Training Retreat Week begins to take shape.
       This Wednesday I baked-Cinnamon Buns, Marmalade Muffins, Pita Bread Cranberry Loaves and Breakfast Cookies. Whew! A long day, with a LOT of dishes to wash!!!
       Yesterday, I met (successfully) with a prospective Training Week Team Leader, and it looks as if she is coming on-board. The Team Member’s Planning Guide is getting an overhaul (oh  he joys of formatting, ugh!), word has been received that the two First Nations communities outside Regina are “a go”!! This is extremely good news as there have been a number of obstacles to overcome.It now looks as if we will have a Team in the Diocese of Qu’Appelle for the full 4 Weeks, Praise God!
    And why am I starting this post on a Friday, again? WELL- tonight, as previously noted, is the Spring Coffee House so in a couple of hours my first helper arrives and we will be off to Isaiah 40 to set up. Then tomorrow is the wedding of Alicia and Josiah!!
      Josiah is a Day Camp Committee Member and has been a Team Leader several times; last summer he led the Maritime Team. I have known his family for well over 20 years and actually was their Babysitter too! So this is pretty exciting stuff.     
     This Sunday is our monthly “All Ages” Service and we are going to have a sort of Liturgical “Poetry Slam”! My role being a “Poetry as Art” Workshop, at which we will be exploring the use of Calligraphy as art. In a moment of complete mental aberration I also invited some former neighbours to High Tea Sunday Afternoon.
    All of the above explaining why it seemed wise to at least start this Post or it might not happen until the middle of NEXT week!
    But now I must rush off to procure the groceries for the Coffee House beverages-Iced Almond Mochachino/Iced Orange Mango Tea & Iced Vanilla Chai Latté…
Saturday Morning….
       The Coffee House went off very well. I am very much hoping that, this time, we will be able to post some clips of the “sets” on our YouTube channel, but cannot promise, as I did not do the filming!
        We had everything from Classical piano, to original Rap, duets, solos and a couple of excruciatingly bad jokes from the MC! Several Youth Groups came “en masse” and people brought excellent baking, which was gobbled up by the crowd. Totally exhausting, but successful. Praise God!
        It was raining first thing this morning, but the sun is peeking out now and it is HOT outside, the forecast says 23C!! What a gift for the wedding this afternoon.
       Along with tomorrow’s “reflection” I am hoping to include a bit about the wedding, but for now, I must be off to buy a few groceries, have lunch, and change into a special dress.
       As my contribution to the reception I have made an Asian Rice Salad, so I thought that would be suitable, festive item for this week’s featured Recipe!
Asian Rice Salad
  • 1 cup brown Basmati rice, cooked and cooled
  • 1 cup snow peas, blanched, drained and halved
  • 1 can Hearts of Palm, julienned
  • 1 red pepper, julienned
  • 3 spring onions, thinly sliced
  • ¼ cup cashews, toasted


Dressing: –
  • 1 Tbsp. minced fresh gingerroot
  • 2 Tbsps. Soy Sauce
  • 3 Tbsps. Olive Oil
  • 2 Tbsps. Rice Vinegar
Place salad ingredients in a serving bowl. Whisktogether dressing ingredients and pour over salad, toss gently with a rubber spatula. Serve chilled or at room temperature. Serves 4, easily doubled.
