Hello Blog Friends!
Another week has flown by and I find myself back in the zone of daily meetings on Zoom, Skype, FaceTime and Google Meet 😊.
This past Monday (the Labour Day Holiday!) Jessica and I met on Skype to discuss layout and editing of the e-book on which I have been working for most of the summer. I had prepared a list of questions and clarification points and was able to get lots of useful advice. As of Tuesday I was hard at work again, refining details in each chapter and continuing with watercolour illustrations.
Tuesday evening was the Day Camp committee meeting. It was great to have all 5 of the current members present, although a couple of them had to join in late due to their work schedules. We really covered a lot of territory talking about plans for the Cook-Along, the Autumn Day Retreat and Carols & Cocoa as well as trying to come up with names of others to approach to join the committee. One person I have spoken to is currently praying about it, another has declined due to a lack of free time and a couple of others have not yet responded, so the hunt continues 😊
During the week I also needed to send to our President the draft agenda for our September Board meeting, coming up on the 19th. The 18th is supposed to be the first session of our Cook-Along but so far we still only have 2 families registered, which is rather discouraging. I keep thinking of someone else who might possibly be interested and firing off another email or text message. The committee has decided to keep pushing forward at least until next week, before we have to make a decision whether or not to cancel the series.
Outside of actual office hours I have been working every afternoon on the e-book illustrations as well as doing a bit of sewing as this year I am planning to wrap my Christmas gifts in Furoshikis so there is a lot of hemming to do 😊.
Wednesday evening I participated online in the Diocesan Ordination Service. Three candidates were being ordained, two to the Diaconate and one to the Priesthood. Susan, the one being priested, was dressed in the chasuble I had so recently been altering for her and it was also special to see Fresia as over the past 18 months I have been partnered with her as a mentor through the Bishop’s Commission on Ministry on which I serve.
The weather, this week, has included several rainy days and even a short hailstorm! It is good to see the garden greening up again after such a long dry spell, although I am already working on cutting back the perennials as the flowerbeds transition into autumn mode. This morning I did some work on edging all the beds and I think by next week I shall need to mow again.
As usual, I am currently in the “Bake & Blog” mode so I should really end off here and get back to rolling out some Pennsylvania Dutch Chocolate cookies. Today I’m also baking some apricot pistachio biscotti, a batch of bagels and an Apple Crisp.
So now I guess it is time for a recipe. One evening this week I made this quick and tasty pasta dish, do give it a try 😊.
Tagliatelle with Heirloom Tomatoes and Sausage
- 12oz. Tagliatelle
- 2 Italian Sausages, skins removed, and broken up
- 6 cloves garlic, thinly sliced
- ¼ cup red wine
- 5 Tbsps. tomato paste
- 2 tsps. dried basil
- 6 sundried tomatoes, slivered
- 2 Heirloom tomatoes, diced
- 2 Tbsps. olive oil
Cook the tagliatelle according to package directions. Meanwhile heat the olive oil in a skillet and sauté the garlic for a few minutes until fragrant. Add the sundried tomatoes and sausages and cook for about 7 minutes. Stir in the wine, basil, tomato paste and heirloom tomatoes. Cook down for a few minutes to form a sauce. Drain the pasta and toss it with the sauce in the skillet. Serve immediately. Serves 2-3
