It’s been a pretty full week around here. A good chunk of my “office” time was spent preparing for the AGM (take two!)/Board Meeting, which will be held tomorrow afternoon. Seeking out eleven extra voting members to attend the AGM, finalising the agenda for each meeting, sending separate emails to the correct people with the correct agenda(s), testing the meeting link with Guylaine, our new Director of Communication, etc., etc., etc.
All of this had to be accomplished by Thursday since yesterday and today have been totally swallowed up by the triennial Conference Synod held (of course 🙂) on Zoom.
There was also time to add some more content to the Day Camp Virtual Experience Folder. All that remains are the Google Slides that Mae Anne agreed to prepare. It is my dearest wish that someone will actually apply for either the VE or the In-Person Day Camp Program but with lockdowns being extended in several provinces the possibility seems increasingly remote.
Plans are beginning to come together for the Day Camp Team Gathering. We now have a Speaker plus worship music leaders in place. I still need to put up a post @ https://www.instagram.com/mrsphilmoreschickens/ maybe I’ll get to that this evening. I did put a notice up on the Day Camps FB group and one person has already replied that she will be attending, so that’s a bit of good news.
Outside office hours there have been several meetings on various platforms and I’ve spent as much time as possible continuing to uproot invasive plants from the flowerbeds. It’s a good thing I’ve pretty well completed that task because the maple trees are starting to drop their seed pods so over the next few weeks there will be gazillions of those to sweep and rake up. Ugh!!
But it is very good to be outdoors again as the weather starts to really warm up. Once we are passed May 24th it is unlikely we will have another killing frost so I shall then be planting some perennial flower seeds in my newly tamed flowerbeds!
Thursday was Ascension Day and so I regretfully packed away all my Pysanky and other Easterish decorations since we are now moving towards Pentecost. Next weekend it will be time to blitz the house and change the decorations to the Pentecost/Summer scheme 🙂
I’ve been squeezing in writing bits of this post during Synod breaks but thankfully the conference has just ended so perhaps there will be time for a bit more garden work before turning my attention to cooking dinner. No baking today of course, fortunately Sue didn’t need any GF bread this weekend so it wasn’t a necessity to bake.
I’ll just be making a simple meal for this evening but would like to also prep something for tomorrow’s dinner, as the AGM/Board will take up the whole afternoon.
Well Thomason is looking piercingly at me, as it is almost his suppertime! He has been very good today, as he has had to be rather short-changed on walks during the Synod sessions. So I had better wrap this up and feed him.
With the warmer weather my dinners are starting to include some more main course salads, I enjoyed this one on Thursday evening.
Ham & Melon Salad with Raspberry Vinaigrette
- 1 leaf lettuce
- 12 thin slices cooked ham
- 1 English cucumber, thinly sliced
- 1 small Honeydew melon, cut into thin wedges
- ½ a pineapple, cut into spears
- ½ cup frozen raspberries
- ¼ cup each apple cider vinegar and olive oil
- 1 tsp. Herbes de Provence
- ½ cup chopped cashews
Wash and shred the lettuce and divide between 4 large dinner plates. Arrange the ham, melon, cucumber and pineapple over the bed of lettuce. Garnish with cashews.
Combine the raspberries, vinegar, oil and herbs in a small bowl and whisk together vigorously to break up the berries.
Serve the salad with the vinaigrette and fresh cornbread 🙂 Serves 4.
