       Here we are already at the last post of August!  I am hoping that soon you will be redirected to the new blog site on Word Press but we are still working out some glitches. I checked with Wentworth (our CTM tech guru) and we decided it was safer to publish on Blogger until revisions are completed on the main CTM website but stay tuned, it won’t be long 😊

      This week I have spent time informing more people about the decisions made by the Day Camp committee regarding future plans. One person who I felt it was essential to share with was Brett Cane as he was really the one who “invented” our program back in 1979. He will modestly assert that there were others involved, but we all know that Brett deserves the credit for being our founder! I sent Brett an email outlining all the options we plan to offer and explaining the reasons for making our decisions and he responded encouragingly and was kind and supportive. I have had conversations with a number of other people too, including several members of the CTM Board, to whom I also sent all the information.

      Of course the Blog has also taken up a fair amount of time. For one thing the information on several of the tabs has to be updated in light of all the program changes and Brenda (who has done a TON of work on the Word Press site) has dealt patiently with me as I flag various small problems that still need fixing over there.

        Sadly CTM’s Senior Youth Camp Directors had to cancel today’s “Camp Day”, which they had organised as a sort of get together and information day for campers and families and which was supposed to be held at Camp Livingstone their usual venue. All week the weather forecast was not looking good and by yesterday it was obvious that it would be raining hard today so there was no choice but to cancel. This was so disappointing as they had done a lot of prep work, abiding by all the current social distancing restrictions, which is why the event had to be held exclusively outdoors.

        Over the last couple of days I have used all my spare time for the “Changing of the Decorations”. It is now late in the afternoon on Saturday and I have just completed going from room to room praying over each space and sprinkling some of the Holy Water which our Bishop kindly made for me. I will need to wait until next week to take any photos since the light is appalling due to the heavy rains. But before I wrap this up and head into the kitchen to start on dinner prep we need the weekly recipe.

 I had to squeeze in some baking time this morning since Sue was out of GF bread so, as I had several ripe bananas I decided to make my favourite Banana Loaf.

 

Orange Chocolate Chip Banana Loaf

  • ½ cup raisins
  • 1/3 cup orange juice
  • ½ cup softened butter
  • ¾ cup cane sugar
  • 2 eggs
  • 4 small bananas, mashed
  • ½ cup each chocolate chips and chopped almonds
  • 1 ¼ cups unbleached flour
  • ½ tsp. baking soda
  • 1 tsp. baking powder 

 

 

Line a 1lb. loaf pan with parchment paper and grease lightly, set aside. Combine the raisins and orange juice in a small saucepan and bring to the boil. Set aside to plump and cool. Beat the butter and sugar with an electric mixer until fluffy and beat in the eggs one at a time. Add the bananas. Stir in the chocolate chips, nuts and cooled raisins with their liquid. Whisk together the flour, soda and baking powdered stir into the banana mixture. Turn into the prepared loaf pan and bake for 1-1 1/2 hours in a preheated 325F oven.Allow to cool in the pan on a rack before turning out.
