We’ve had a scorcher of a week around here, with temperatures reaching near to 40ºC.. The weather office says it should break later today, which is good news, especially for my black furry companion and for my parched flowerbeds
This would have been the Team Training Retreat week and I remember last year was just as hot as this because Thomason and I had the daily walk to and from St. Matthias Church, where our workshops took place, and those walks were long and HOT!!!
The biggest event this week was the publishing of our first Terrific Tuesday post. There hasn’t been a huge amount of feedback but happily the comments we have received have all been very positive. Much of the rest of the week has been about prepping for the next TT post including making craft samples
Although it is nice and shady on the porch where I like to work on summer mornings I have been driven inside some days as there is a huge amount of roadwork happening on the street and the noise is quite deafening. Thankfully the crews do not work on the weekend so it is more peaceful today.
Monday I had a lovely visit with Jillian, who came in the late afternoon and stayed for dinner with me. I made Banh Mi Bowls and we had Macha Cheesecake for dessert (I had frozen the leftovers from the dinner when Steven and his dad were with me a couple of weeks ago). It is still quite novelty to have some one in the house and Jillian is such good company!
Yesterday afternoon I also had Jill over for a visit. We had not seen each other since before the pandemic although we had been in touch via texts. It was wonderful to catch up and I gifted her with a Pysanka (just a tad late for Easter 😊).
Even though Sue does not need baked good this week, I’m still doing some baking today since I had completely run out of granola, my “go-to” breakfast staple and also wanted to make some buns and maybe another batch of scones. I need to get everything into the oven soon since later this afternoon our meat farmer, Dwight, is coming into the city with orders and I need to walk over to the drop off point outside a nearby church. It looks as if it will be raining by then so Thomason may need to stay home as he hasa habit of jumping in puddles, which could prove a problem with me as I carry home a heavy parcel of frozen meat all of which is the offal for his food!
So I had better wrap this up as it is almost noon, but first we need a recipe.
Thursday evening I made Kimchi Fried Rice, it is super yummy so I’ll share it here:-
Kimchi Fried Rice
1 Tbsps. sunflower oil
1 onion, diced
½ cup bacon
1 cups sliced button mushrooms
1 red pepper, diced
1 ½ cups Kimchi
5 cups cooked Basmati white rice, chilled
4 eggs
¼ cup Tamari
2 Tbsps. Mirin
3 Tbsps. toasted sesame oil
4 green onions, sliced
¼ cup toasted sesame seeds
Heat the oil in a large frying pan and sauté the onion until softened. Add the bacon and cook until crisp. Stir in the red pepper and mushrooms and sauté a further 2-3 minutes. Add the Kimchi and rice, breaking up the rice and tossing until it is heated through.
In a small bowl, beat the eggs with the Tamari, Mirin and Sesame oil. Pour over the rice mixture and continue folding together with a spatula until the egg is just set.
Transfer to 4 individual bowls and garnish with the toasrwd sesame seeds and green onions. Serve immediately. Yum.
