My goodness when I wrote last week I hardly thought I would be looking out the window at snow flurries today 😊 .It has been unseasonably cold all week with frost warnings every night. Brrr! I had hoped to do some outdoor house paintwork in the afternoons but only managed to touch up the deck railings one slightly warmer day.
           Day Camp work has continued albeit not with the mounting excitement usually found around here in the month of May. I have been looking at the program that, God Willing, we will mount in 2022 and making lists of people we can approach to work on writing and editing Manual content. I’m also planning out some special midweek Blog posts to run this July bringing a taste of Day Camps to some of the Campers who will not experience our program this summer.
             My spirits have been lifted by a couple of videos shared  by friends. I know that the “UK Blessing” has gone viral, but here is a link in case you haven’t seen it and secondly  “Praise Song for the Pandemic” is a moving prayer that I first heard when tuned in to a podcast. Some time has also been spent in general office work that comes from a change in CTM leadership following our recent AGM. Both our new Treasurer and President have needed documents and info, which is all a part of my job description 😊.
          There has also been a bit of garden work and soon it will be necessary to mow the lawns for the first time this season. A neighbour very kindly brought me two buckets of organic compost and I have spread that on parts of the flowerbeds.  Dwarf Alpine tulips are in bloom, despite the cold and there are also lots of hyacinths.
        Yesterday Thomason seemed to be particularly bored (although his routine has hardly altered during the lockdown) so I decided it was time to gift him with the antler “Uncle Steven” gave him for Christmas. As you can see by the photos, he was a vey happy dog 😊
        Today is going to be a Bake and Blog Saturday since Sue requires- 2 GF loaves, 3 GF Baguettes, and 2 dozen cookies. I’m also going to make a whole grain miche for myself and some scones and possibly finish up by baking a pizza for dinner 😊
         But since it is no longer snowing I think first I had better go outside and do a bit of garden work. Before I go it is time for a recipe, I’ll be making these later today-
Maple Walnut Scones
  • 3 ½ cups flour
  • 1 cup walnuts, chopped
  • 4 tsps. baking powder
  • 1 tsp. salt 
  • 1 cup milk
  • 2/3 cup butter
  • ½ cup maple syrup
Combine the flour, baking powder and salt and cut in the butter. Stir in the chopped nuts. In a separate bowl mix together the maple syrup and milk, pour over the dry ingredients, mix until just combined. Turn out onto a well-floured surface and gently knead together until a soft dough is formed. Roll or pat out into a ½” thick circle and cut into 8-10 wedges. Transfer to a parchment lined baking sheet and bake in a preheated 425º oven for 15 minutes or until golden.Yum.
