Epiphany 2


After the back-to-back CTM events of last weekend the last few days have generally moved along at a less frenetic pace; however, there is still plenty to report.   

        Last Monday morning the agenda was drawn up for our Day Camp Committee meeting and sent off with a reminder that we will be meeting this coming Monday. I also took a preparatory look at the Retreat Week Schedule and sent around a draft version of that, too.
      Wednesday saw the first “Wednesday Words” Guest Blog Post of the year. We received a super article from Mathew Wood; please take time to read it, if you have not already done so! That morning we also had the excellent news that our Bishop will be able to join us this year to perform the Commissioning of the Teams. Unforeseen circumstances have prevented his being available the past 2 summers so this is good news indeed. We are proud that our Day Camp Teams represent a wide variety of Christian denominations but I think that even those who are not from an Anglican background feel that their ministry is being affirmed and valued in a special way when our Bishop takes the time to come and Commission them on a sticky July evening!
      Thursday Jillian dropped by to see if she could make any more progress with the Blog Sideshows. There is some sort of problem with putting them up along the margins of the Blog. We do hope we can overcome these technical difficulties and share some great photos with you soon.
 Then, yesterday Arnee (our Manual typist, par excellence) came for a cup of tea and to pick up the much belated Christmas gifts I have
made for her daughter Michelle, and family (including the hoodie for new baby, Maria and the rosebud hair clips for the older girls).Arnee is heading back to the UK at the beginning of February and is kind enough to act as “courier service”for me!
The presents have all come together nicely so I’m anxious for them to eventually make their way into the hands of each recipient.
Of course, in between, lots of other stuff has been going on, including a nasty 24-hour stretch without heat when the furnace ran out of oil, followed by the  horrible discovery that the motor had to be primed once oil was delivered. My gratitude to family friend, Brian, (who spent a goodly portion of yesterday morning crouched on the furnace room floor, priming the system) knows no bounds! It was so wonderful to hear the furnace finally kick-in and watch the thermostat gradually rise from the 11C to which it had fallen.
  
In “crafty” news…
   The Norwegian fisherman’s mittens I’ve been knitting are HUGE so I sure hope that the felting process is successful or they will need to be given to a polar bear with cold paws or perhaps turned into oven mitts (hmm?)
  Several afternoons I delved into a stack of my old 100 Idées magazines and have found both a skirt and a dress that I hope to sew with the fabric Jill gave me for Christmas. And one afternoon I made a new Winter Garland for the Studio bay window.
  So here we are at Saturday again. As I type, Norwegian Crispbread is baking in the oven (seems to be quite the Norwegian Theme around here!) plus Cranberry Orange Scones followed by a casserole of Haloumi Bake for dinner.
Last evening I made a batch of my favourite Fish Cakes. Great cold weather Comfort Food, maybe you need some too??

 Fish Cakes

  • 1 can organic tuna, drained 
  • 1 lb. red potatoes, cooked and mashed
  • 1 egg
  • Pinch cayenne
  • 1 tsp. lemon juice
  • 1 Tbsp. butter or margarine
  • 1 egg
  • ¼ cup milk
  • ½ cup cornmeal

In a large bowl, combine all ingredients and mix well. Form into 7 or 8 cakes, approx. 1” thick.Beat egg and milk together in a shallow bowl. Place cornmeal in a second shallow bowl. Dip each fishcake first in the egg and milk, then in he cornmeal, coating evenly. Set aside on a tray and chill for approx. 30minutes. Heat 1 Tbsp. each butter and oil in a large frying pan, over medium heat. Fry fishcakes for 8-19 minutes each aide, until well browned and thoroughly hot. Serves 2 hungry people, easily doubled.
